Fermenting dough isn't just a step in bread baking; it is an act of preservation and flavor alchemy. At Dough & Fyre, every pizza box starts its life 48 hours before it hits the woodfire oven. Here is a technical dive into the biological magic occurring in our flour bins.

The Wild Yeast Ecology

Commercial bakeries rely on isolated yeast strains (Saccharomyces cerevisiae) to inflate dough in under an hour. While this provides rapid volume, it neglects flavor. Our dough is built on a legacy wild starter—a symbiotic culture of wild yeasts and lactobacilli. When mixed with water and unbleached flour, these organisms begin a slow metabolic journey.

Breaking Down Glutens
